Any thoughts on best 1000g off set smoker?
I know this may be irrelevant to many people in this group. But curious if there are any here that cook with 500 or 1000 gallon off sets.
I’d like to one day open a restaurant. I have a 500 gallon a trailer made by a company I won’t mention. I’m not a big fan of the smoker for many reasons, with the biggest reason being the big temperature difference between the two sides, many times ranging from 50-100 degrees. I have a small 1000 gallon from primitive pits on order and looking to get another 1000. I have seen only one video reviewing the 1000 from primitive pits (Joe Yim) who had nothing but good things to say about it.
The other pits I was looking at are Moberg, millscale, etc,. But reviews are non existent or hard to come by. In addition the price of a 1000 gallon from primitive starts at $10k whereas for Moberg, it starts at 17k. In terry blacks blog, he says that the first 4 pits are primitive and the 5th is moberg. He does say about primitive, “All four run very well but will have some heat loss in some of the door seals and tend to use more wood due to an inefficient firebox design. Keep in mind that all four still yield a very high-quality product and I wouldn't replace them. They're seasoned (which is definitely a real thing!) and we've learned to cook on them and love them.” I noticed that the article was written in 2021 and the owner of primitive seems to be open to improving his design based on feedback.
At the end of the day, it seems they all produce great bbq, maybe it’s in my best interest to order a few different ones. Any thoughts?
