What are restaurants like The Alchemist called and does Seattle have any?

I'd like to try one of those fine dining restaurants where they have a unique, and artistic take on the food. Is there a specific name for these kinds of restaurants besides fine dining? Kinda something like either The Alchemist, Supperclub.Tube, or Enigma. Really more about an experience than just food. Hell, it doesn't have to be fine dining either, just something unique and fun. Are there any standouts in Seattle for y'all? I'd love to hear your opinions!

Edit: normal restaurants are good too! I think I've seen a few themed ones that are really cool like Dreamland Diner. As long as they got cool food that tastes half decent!
