I just learned the worst french onion soup maybe ever.

So I'm currently on the school part of a dual education (part restaurant and a bit of school). The girst recipie we learned was supposed to be french onion soup.

Except there was no bouillon so the teacher used water, ementaler instead of gruyere, the cheapest cooking wine you could possibly get and sandwich bread which he cut out pieces and only dried herbs. I'm honestly not really sure how to take this on. I can work with the stress of a kitchen but I really struggle with the terrible recipies we learn here.

Oh and we all cooked it later on and the teacher found mine great but I honestly hated everything about it. And I forgot, he instructed us to roast the onions instead of charamelozing them. So pretty much everything was very different from any recipie I could find online and I'm kind of stuck right now becouse I'm still pretty new and I dom't want to be critizising but I also love cooking and this hurts my heart.

Any tips on how to procede? Thanks already.
