Where should I start?

So I’ve been out of the emulation scene for like 16 years lol. MAME was my platform of choice back then. Now fast forward, I’m old and my son is now into video games so I want to play some classic games with him so I’m trying to learn the the scene again and I need some guidance on where to start.

I’m looking to play classic arcade games, NES, SNES, Sega Genesis, and Dreamcast games on either an Apple TV or a Mac Mini. I’d probably use PS4 controllers or Switch controllers paired to the ATV or Mac Mini, however I’m open to any other controller suggestions. Looking for something that doesn’t take too much setup and also has a good couch GUI for navigating it with a controller without needing to drop back to keyboard and mouse too often since I’d like my son to also be able to play it while I’m away (he’s 8).

I’m assuming there isn’t a single emulator that plays all of the platforms I listed above, although I’d love it if there are any suggestions that does play them. With all that said though, what are good emulators I should look at for my stated goals?
