Trial and error to find the perfect mallow sandwich recipe
I’ve been frustrated by online mallow sandwich copycat recipes because they are all based entirely on mallow fluff, which is too sweet. We know from employees that the base is pudding and whipping cream, so I decided to experiment. I tried five different versions of the cookie, plus nine versions of the filling.
The best cookie was lifestyle of a foodie’s version with unsalted butter. However, instead of the filling in that recipe, buy a box of jello-brand Oreo cookies n’ cream pudding mix. Mix it with 1 1/2 cups of whipping cream until stiff peaks emerge. Then gently fold in 1/2 cup mallow fluff and some brownie pieces (I bought premade brownies from the grocery store because I was too lazy to make those as well).
I know it’s not how they make it in the store - and it’s certainly not a perfect replica. But it’s pretty damn good. I might prefer it to the original!
